Green smoothies are a great way of getting veggies into your diet, you're probably thinking raw vegetables aren't a part of the gastroparesis diet! but I've noticed that some people including myself can tolerate baby spinach blended up in a smoothie. This smoothie is a great source of potassium which helps your blood pressure, has natural electrolytes from the coconut water which helps keep you hydrated and contains natural enzymes that help with digestion from the pineapple. The natural sweetness of the ripe banana keeps this smoothie sugar free but feel free to add some if you want. I recommend using/buying a good blender such as the Nutribullet (what I use) or Vitamix which helps pulverize the fruit so that you don't have to strain it but if you don't have one I would strain the smoothie a few times to make sure there aren't any chunks.
Ingredients
- Half of a Ripe Medium Banana
- About Half a Cup of Pineapple Chunks (I used fresh)
- 1 Cup of Loosely Packed Baby Spinach
- Half a Cup of Coconut Water (I used Pineapple Vita Coco)
- Optional: Ice Cubes
- Optional: I would recommend adding 1 tbsp of coconut oil to add calories if you're trying to gain weight or are having trouble maintaining
Add all the ingredients in your blend and blend it until you can no longer see pieces of spinach. Pour into a glass and enjoy!
